After 5 days of cold weather, we quickly warmed up the mid 40’s for 2 days. The first day just thawed things out, but yesterday the sap flow picked up to nearly a gallon of sap per tap! The sugar concentration has now increased from the paltry 1.2% to 2.2% . It will now take 40 gal. of sap to make one gal. of syrup. We have 2 more days of sub freezing temperatures before next week’s warmup back to the 40’s. We should be making our fist syrup next week.
